Bruschetta

Everytime I see Julie & Julia, I cannot help but pause the scene where Julie is flipping the slices of bread to almost fry it in oil, tops it with seasoned peppers and her husband digs into a big bite of bruschetta! The crunch, the colors, the glazed bread, it’s as if I can taste it with my eyes!

This bruschetta recipe is the easiest one and it only takes a few ingredients. The result? A deliciously flavored slice of bread with seasoned tomatoes and hint of basil. Make it for your next tea party or a brunch and see it quickly becoming everyone’s favorite!

Ingredients

For The Topping:

2 medium-sized tomatoes

Fresh basil

2 cloves of garlic

2 tbsp olive oil

1 tbsp balsamic vinegar

Salt

Pepper

For The Bread:

1/2 cup olive oil

1 bread loaf

Recipe:

  1. Deseed and chop the 2 medium-sized tomatoes, grate the 2 cloves of garlic and add chopped fresh basil leaves.

  2. Add 1 tbsp balsamic vinegar and 2 tbsp olive oil to the tomatoes, season it with salt and pepper. Mix it well and keep it aside.

  3. In a pan, heat 1/2 cup olive oil. Slice up the loaf of bread and toast them in the hot oil until it’s brown, crispy and smells heavenly!

  4. Only once the bread is nicely toasted take it out and add the tomato topping on each of the slices. Ready to dig in yet?

Note: Bruschetta tastes the best only fresh. Once the topping soaks through the bread it becomes soggy and let’s face it, that’s not what we want!
