Broccoli Toasties

Eat Your Greens!!! As important as that is, I never really liked broccoli. Until I discovered this recipe….and, let’s just say I am meeting all the green requirements of my body!

Perfect for an evening snack or a great appetizer when you’re hosting, this broccoli toast will have everyone asking you for the recipe. It’s a favorite in our household and I make it everytime we host someone for the first time, carefully making a mental note of not repeating the menu but our sweet friends are very forgiving incase I do! Or they just love this toastie so much they don’t mind the repeats ;)

Broccoli Toastie

This recipe makes 10 toasties, feel free to scale it as needed!

Ingredients:

Broccoli Florets - 200g or 2 cups

Tomatoes - 2 medium

Onions - 1 cup, sliced

Green Chillies (Optional) - 2 small

Olive Oil - 2 Tbsp

Salt - 1 Tsp

Red Chilli Powder - 1/4 tsp

Mozzarella Cheese - 120g or 1 cup

Loaf Bread - 10 slices

Recipe:

Step 1: Boil the broccoli florets or steam it if that’s what you prefer until they are nicely cooked and soft.

Strain it and let it cool down.

Step 2: Take the tomatoes and deseed it before cutting them into small pieces.

(Tip: Roma tomatoes work best for this recipe, they are perfectly firm and not too juicy which makes it easier to cut, not to mention it does not make the bread too soggy)

Step 3: Take a small onion or 1/2 of a bigger onion and slice it up to get 1 cup of sliced onions.

Step 4 (Optional): Finely chop green chillies. I love the fresh heat of a green chilli that takes me by surprise when I eat this toast, but if you have a low spice tolerance you can completely skip this step.

Step 5: Once the broccoli florets have cooled down, chop it up finely in a grinder. If you have one with a ‘Chop’ and ‘Puree’ setting, like mine (Kitchen Aid Mini Food Processor), make sure you use the ‘Chop’ setting. We don’t want mashed broccoli!

Step 6: In a bowl, add the chopped broccoli, onions, tomatoes, green chillies.

Step 7: Go ahead and add the olive oil, salt and red chilli powder.

Step 8: Now comes the fun ingredient, THE CHEESE! I love using Mozzarella cheese but feel free to experiment with different kinds of shredded cheese.

Mix everything until it’s well combined. It starts looking so beautiful! I’m always tempted to eat it as a salad at this point.

Step 9: Slice up a loaf of bread, make sure each slice is about 3/4th inch in thickness.

Generously top each slice of bread with the broccoli mixture.

Step 10: Bake the slices at 400F for 13-15 mins.
